This is an evo oil made only from the olives of the Nostrana di Brisighella cultivar, harvested early while still green and in early October in order to bring out the best of the characteristics of the local cultivar. The cultivar gives rise to a very limited production of Italian evo oil. An extra virgin olive oil that highlights that it is not so much quantity but quality that is important.
The oil is green in color. An intense fruitiness stands out on the nose, with broad herbaceous aromas ranging from citrus leaves to balsamic notes and thyme. The enveloping palate has a breadth of flavor, with a refined tanginess of green olive on the finish. Particularly suitable for enhancing strictly raw dishes, to enhance fish carpaccio, salads, vegetable creams and soups.
