It is light green in color with broad aromatic notes reminiscent of perfectly ripe olives. n the palate, a herbaceous fruitiness stands out, with clear notes of artichoke, chicory, lettuce and arugula. It has a well-balanced bitter and tangy finish.

A balanced and very versatile oil, particularly suitable with the main dishes of Mediterranean cuisine, especially for bruschetta, salads, pinzimonio, fresh and gratin vegetables, legume soups and caprese.
